Weyermann® CARAAROMA® Malt is a specialty caramel malt renowned for its bold and complex flavor profile. With a color range of 150–200 Lovibond, it imparts a deep reddish-brown hue while delivering rich notes of dark fruit, caramel, and toffee. It also enhances body and mouthfeel, giving beers a luxurious, full texture.

This malt is ideally suited for dark beer styles such as Bocks, Barleywines, Belgian Strong Ales, and other malt-forward recipes that benefit from layers of sweetness and depth. Its pronounced character complements roasted malts and base grains, elevating the overall complexity of the brew.

Role in the Brewhouse

Weyermann® CARAAROMA® Malt contributes unfermentable sugars that improve body, sweetness, and foam stability. Its roasted caramelization process develops signature flavors of dried fruit and dark toffee, which persist into the final beer. This makes it an essential tool for adding both flavor and color intensity.

Brewer’s Guidance

Use CARAAROMA® Malt at 5–15% of the grist for balance and depth, or up to 20% in bold recipes that call for rich caramel sweetness. Lower percentages enhance complexity subtly, while higher usage imparts pronounced color and flavor impact.
