Taste & Character

Briess Caramel 60L Malt is a roaster-produced crystal malt made from high-quality North American two-row barley; its drum-roasting process develops pronounced sweet caramel flavors, toasted bread notes, and a rich golden-to-reddish hue that enhances both color and taste.

Where It Shines

This medium crystal malt excels in a broad array of styles—from light pilsners and Vienna lagers to amber ales, porters, stouts, doppelbocks, and barley wines—where it contributes body, flavor, and color with elegance and versatility.

Role in the Brewhouse

As a specialty crystal malt (zero diastatic power), Caramel 60L enhances foam stability, mouthfeel, and malt complexity through its glassy, non-fermentable sugars—contributing both flavor and functional benefits in balanced measure.

Brewer’s Guidance

Use 1–3% in pilsners to round out flavor, 5–10% in Vienna, California Common, Märzen, Oktoberfest, and dark lagers for added warmth and depth, and 5–15% in ales, porters, stouts, and barley wines for pronounced caramel character, body, and visual appeal. Its 77% extract yield and 60 SRM make it reliable for adding both color and sweetness.
