Where It Shines

Traditionally used in oatmeal stouts, they are also popular in hazy IPAs, porters, and Belgian-style ales for creaminess and haze stability.

Role in the Brewhouse

A pre-gelatinized adjunct with no diastatic power, flaked oats add proteins and dextrins that increase mouthfeel, haze, and foam stability.

Brewer’s Guidance

Use 5–20% of the grist depending on style—lower for subtle creaminess, higher for rich mouthfeel and haze. Consider adding rice hulls for smoother lautering.
