Taste & Character

Gambrinus Honey Malt is a highly unique specialty malt known for its sweet, honey-like flavor and aroma, reminiscent of bread crust, pretzel, and toast, with a hint of tartness. It imparts a rich, malty sweetness without roasted or astringent notes, and contributes a golden-amber color in the 15-25 Lovibond range.

Where It Shines

Often used in small quantities (up to 10% of the grist), Honey Malt enhances sweetness and complexity without overpowering other ingredients. It adds depth to a variety of beer styles – from Pale Ales and Lagers to Märzens, Bocks, Dunkels, Alts, Brown Ales, and Milds.

Role in the Brewhouse

As a specialty malt (non-diastatic), Honey Malt contributes pronounced malt sweetness, flavor complexity, and golden coloration without adding bitterness. Its use up to about 10% allows its character to enhance rather than dominate a grist.

Brewer’s Guidance

Use Gambrinus Honey Malt at rates up to 10% of the grain bill to impart a light, sweet, and richly layered malt character. It pairs beautifully with both lighter and malt-forward beers, adding complexity while preserving harmony in the final brew.
