Where It Shines

Ideal in American wheat beers as a base; also improves head retention in lagers, Wits, Kölschs, or lighter ales.

Acts as both a base and wheat specialty malt—strong enzymatic power supports mash conversion, while contributing body and authentic wheat character.

Brewer’s Guidance

Use 5% for subtle head retention, 10–20% in Kölschs, 30–40% in traditional Wits with raw wheat, and over 50% as the base in American wheat beers.
