Taste & Character

Briess Midnight Wheat Malt is a dark roasted wheat malt (≈550°L) that imparts deep black color with surprisingly smooth, mild roasted flavor. It adds rich color and subtle notes of cocoa and coffee without the astringency or bitterness of husked roasted grains.

Where It Shines

Ideal for Schwarzbiers, Black IPAs, porters, stouts, or any style where you want to achieve deep, dark color and subtle roast complexity without harshness. It also works well in lighter beers when you want dramatic color adjustment without heavy roasted flavors.

Role in the Brewhouse

A specialty roasted wheat malt with no diastatic power. Its huskless form eliminates tannic bitterness, making it an excellent choice for color and smooth roast contribution while maintaining balance in the grist.

Brewer’s Guidance

Use 1–2% for gentle color adjustment in lighter beers, 3–5% for noticeable darkening with light cocoa notes, and up to 10% for deeper roast complexity in stouts or porters.
