Briess Caramel 80 L Malt is a roaster-produced crystal malt made from 2-row barley grown in the U.S., offering pronounced caramel and burnt-sugar flavors with raisin-like richness and a deep reddish hue. Its full-bodied sweetness and color derive from the highly glassy, crystallized sugars formed during roasting.

Where It Shines

Ideal for enhancing body, color, and malt depth in red ales, amber styles, dark lagers, porters, and stouts. It also works well as a flavorful accent in lighter styles where a touch of rich sweetness is desired.

Role in the Brewhouse

A specialty crystal malt whose non-fermentable sugars enhance mouthfeel, foam, and visual appeal. It contributes significant color and caramel character without adding diastatic power.

Brewer’s Guidance

Use 1–3% for subtle depth in light styles, 5–10% for noticeable caramel flavor and warmth, and up to 15% to really enrich darker ales and lagers with texture and color.
