Briess Ashburne® Mild Malt offers a slightly malty and sweet flavor with subtle toasty and biscuity notes. Crafted in the U.S. from select 2-Row malting barley, it is kilned to a light amber hue (around 5.3° Lovibond), giving it a rich, golden color and a higher dextrin level than standard pale malts—resulting in a fuller mouthfeel and smooth malt character.

Where It Shines

This versatile malt excels as both a base and specialty component. It’s perfect for beer styles that benefit from enhanced malt richness—think English milds, brown ales, Belgian ales, and barley wines. Use it at 10–25% to deepen malt flavor and aroma, or go up to 50% in bock or doppelbock recipes for pronounced malt complexity and full-bodied character.

Role in the Brewhouse

Ashburne® functions as both a base malt and a high-percentage specialty malt, with enough enzymatic power (around 65 Lintner) and extract efficiency (~79%) to drive mash conversion while contributing to body and malt flavor. Its elevated protein and dextrin levels enhance mouthfeel, making it a flexible choice for recipes that need substance without overly dark or roasted flavors.

Brewer’s Guidance

Use Ashburne® as the primary base (up to 100%) in malt-forward ales like milds and brown ales, or include it at 5–25% to enrich lighter beers such as cream ales, porters, and hybrid styles with extra malt warmth and complexity. Its high enzymatic activity ensures good mash efficiency even when used in high amounts.
