Brewing Notes

  • For best lager character, ferment cool and steady within the recommended range, then raise temperature briefly near the end of fermentation for a diacetyl rest if needed.
  • Proper oxygenation and a healthy pitch rate are especially important for lagers and help promote clean fermentation and strong attenuation.
  • After primary fermentation, a cold lagering period improves clarity and refines the finish – longer lagering is often beneficial for higher-gravity styles like bock and doppelbock.
  • Medium flocculation typically clears well with time and cold conditioning, and can be helped further with finings if desired.
