Product Details

WLP644 Saccharomyces brux-like Trois is a distinctive Saccharomyces strain that was once considered a wild yeast, but is now recognized as a unique brewing strain. It delivers expressive tropical fruit – think mango, pineapple, and ripe stone fruit – with a subtle, refreshing tartness that adds dimension without turning your beer into a sour.

WLP644 has become a favorite in modern, hop-forward brewing. In IPAs, pale ales, and hazy styles, its bright fruit character can amplify hop aromatics and create a juicy impression even when you keep bitterness in check. Despite its origin story, it can be handled like other brewing strains and is compatible with standard CIP cleaning practices, making it easy to integrate into a normal fermentation workflow.

Highlights

  • Distinct tropical fruit character – mango, pineapple, and stone fruit
  • Slight tartness for added depth and complexity
  • A unique yeast for hop-forward modern beers
  • Expressive fermentation profile that pairs especially well with late hopping and dry hopping
  • PurePitch® Next Generation packaging for consistent, reliable pitching

Brewing Notes

  • Temperature drives expression: fermenting warmer in the recommended range tends to emphasize big tropical notes, while the lower end can be a bit cleaner and more restrained.
  • Because flocculation is low, a longer cold crash and/or fining may help improve clarity if you are not intentionally brewing hazy.
  • STA1 positive: this strain can show higher apparent attenuation and may continue to slowly ferment more complex carbohydrates. Plan your packaging with stable gravity in mind, and allow adequate conditioning time before kegging or bottling.
  • For hop-forward beers, consider focusing on late whirlpool additions and dry hop timing to layer aromatics with the yeast-driven fruit character.

Storage and Handling

  • Store refrigerated until use.
  • Allow the pouch to warm toward fermentation temperature before pitching to reduce temperature shock.
  • Maintain normal brewery sanitation and CIP practices – this strain can be managed like other standard brewing yeasts.
