WLP618 NA All Day is a non-conventional brewing yeast (Saccharomycodes ludwigii) developed specifically for low-alcohol and non-alcoholic beer. Chosen for reduced ethyl acetate production compared to similar NA strains, it helps deliver a cleaner, less “solventy” profile while keeping your malt and hop character front and center.

What makes WLP618 unique is that it is maltose-negative. It does not ferment maltose (or larger wort sugars), and instead only ferments simple sugars like glucose, sucrose, and fructose. With the right wort production and recipe design, this gives you more predictable attenuation and a reliable path to flavorful NA and low-ABV beer.

Brewing Notes for NA and Low-ABV

  • Build a low-fermentability wort: Mash hot (around 162°F / 72°C or higher) to reduce beta-amylase activity and favor dextrins. Many brewers also shorten mash time (for example, ~30 minutes) to further limit fermentability.
  • Keep gravity modest: Low-ABV and NA recipes commonly start with a lower gravity wort (often around 5-7°P, depending on your process and target).
  • Watch pH and stability: Low-ABV beers often finish with higher pH and more residual sugars, increasing spoilage risk. Consider adjusting wort pH (for example with lactic or phosphoric acid) and follow strict cold-side sanitation practices.
  • Package carefully: Because maltose remains, downstream stability matters. Cold crash promptly after reaching your target attenuation and consider a stabilization plan appropriate to your setup (for example, filtration, pasteurization, and/or maintaining a cold chain).
  • Dial in pitch rate by trials: PurePitch Next Generation is designed around a consistent pitch rate for standard ale ranges, while NA-focused processes may benefit from different pitching strategies. Small-scale trials are strongly recommended to optimize mash, nutrients, and pitch rate for your target ABV.

Storage and Handling

  • Store cold (refrigerated) until brew day.
  • To reduce temperature shock, allow the pouch to warm toward room temperature before pitching (commonly a few hours).
