Product Details

WLP028 Edinburgh/Scottish Ale is a versatile ale strain that produces subtle pear and melon esters that pair well with both malt depth and hop character. Fermented toward the cooler end of its range, it can stay relatively neutral and clean. Push it warmer and it expresses more fruit character, making it a flexible option for everything from malt-forward Scottish ales to hop-forward modern styles.

With medium to high alcohol tolerance, WLP028 is a strong choice for high-gravity brewing – Scotch-style ales, barleywines, imperial stouts, old ales, and more. It helps build a balanced profile that highlights malt complexity without muting hop presence.

Highlights

  • Pear and melon esters with balanced malt and hop expression
  • Neutral at cooler temps, more esters at warmer fermentation
  • Well-suited for high-gravity brewing
  • Great “house” strain range – works in both malt-forward and hop-forward ales
  • PurePitch® Next Generation packaging for consistent, reliable pitching and repeatable results

Brewing Notes

  • Temperature control is the main lever: keep fermentation steady in the mid-60s °F for a cleaner profile, or nudge warmer for more ester expression.
  • For big beers, oxygenation and an adequate pitch rate help support a complete fermentation and cleaner finish.
  • Consider a short warm finish (a brief diacetyl rest) near the end of fermentation if your process or recipe benefits from it.
  • This strain may slow significantly if fermented much below the recommended range.

Storage and Handling

  • Store refrigerated until use.
  • Allow the pouch to warm toward fermentation temperature before pitching to reduce temperature shock.
  • Use a starter or increased pitch rate for high-gravity worts when appropriate for your process.
