White Labs Clarity Ferm is a highly specific brewing enzyme designed to reduce chill haze and improve finished beer clarity. Added at the beginning of fermentation, Clarity Ferm breaks down haze-active proteins that can combine with polyphenols and create haze when beer is chilled. It can also significantly reduce gluten levels in beers brewed with barley and wheat.
Clarity Ferm contains a proline-specific endoprotease that targets haze-forming polypeptides during fermentation. By breaking down these proteins before they can form larger haze-producing complexes, Clarity Ferm helps produce beer that remains bright and clear when chilled.
The enzyme is designed to target the proteins associated with chill haze without negatively affecting important beer characteristics such as color or head retention. It is suitable for use with a wide range of malted barley and other brewing ingredients.
In addition to improving clarity, Clarity Ferm can significantly reduce gluten in beers produced with barley and wheat. Properly treated beers can test below 20 ppm gluten. Because the beer is still produced from gluten-containing grains, however, it should be considered gluten-reduced rather than inherently gluten-free.
Add Clarity Ferm to cooled wort at the beginning of fermentation. Add the enzyme during knockout or immediately before pitching yeast so it can mix thoroughly throughout the wort.
