Taste & Character

Weyermann® CARAFA® Special Type 3 is the darkest malt in the dehusked CARAFA® series, delivering bold roasted flavor with refined smoothness. With an intense color range of 500–600 Lovibond, it imparts a jet-black appearance and contributes rich notes of espresso, cocoa, and dark fruit while avoiding the harsh bitterness and astringency common to other dark malts.

Where It Shines

This malt is perfect for robust beer styles such as Imperial Stouts, Baltic Porters, and Black IPAs. Its ability to provide dramatic color and complex roasted character makes it an essential ingredient for brewers seeking bold, flavorful, and visually striking dark beers.

Role in the Brewhouse

By removing the husk prior to roasting, Weyermann® CARAFA® Special Type 3 ensures smooth flavor development with minimized tannins. It enhances mouthfeel, deepens color, and adds roasted depth, making it a versatile alternative to standard black or roasted malts in recipes that require intensity without sharpness.

Brewer’s Guidance

Use CARAFA® Special Type 3 at 1–5% of the grist for subtle roasted accents or up to 10% in bold dark beers for espresso-like intensity and jet-black color. Its smooth, dehusked character makes it especially valuable in high-gravity beers where balance is critical.
