Gypsum (Calcium Sulfate)
Water adjustment salt for hop-forward beers
Gypsum is one of the most common brewing salts for dialing in water chemistry. It adds calcium and sulfate to your brewing water, boosting hop perception and crispness while supporting mash performance and yeast health. It is especially useful when brewing with soft water, RO water, or distilled water.
Taste and Character
- Accentuates hop bitterness and crispness: Sulfate tends to emphasize hop bitterness and a drier, snappier finish.{index=1}
- Clean, minerally backbone: Helps create the classic pale ale and IPA water profile many brewers associate with Burton-style brewing.
Where It Shines
- West Coast IPA, American IPA, Pale Ale, Cold IPA
- British bitters and pale ales (Burton-style profiles)
- Any hop-forward recipe where your water is low in sulfate and calcium :
Role in the Brewhouse
- Adds permanent hardness: Gypsum adds calcium ions that remain in solution (not removed by boiling).
- Supports mash and clarity: Calcium can support mash performance and help improve hot break and clarity, especially when building water from RO or distilled.
- Helps nudge mash pH downward: Often described as slightly lowering pH, depending on your starting water and grist.
Brewer’s Guidance
- Best practice: Measure your water (or start from RO) and target a profile rather than dosing blindly. Small changes can have a big impact.
- Where to add: Add to mash water and or kettle water. Dissolve thoroughly to prevent clumping.
- Typical starting point: Many retailers suggest simple baseline dosing such as about 1 teaspoon per 5 gallons, but the most accurate method is weighing grams based on your target ppm.
- Know the impact: A commonly cited reference is that 1 gram per gallon adds about 61.5 to 62 ppm calcium and about 147 ppm sulfate.
- Balance matters: Sulfate tends to emphasize hops, while chloride tends to emphasize malt fullness. Many brewers adjust both to fit the style.{index=9}

Good Fit If You Are Brewing
Pick gypsum when you want brighter hop definition and a crisper finish, especially if you brew with soft water, RO, or distilled water and your sulfate is low.{index=11}
