Dingemans Special B® Malt is a highly roasted Belgian malt renowned for its deep, rich flavors of caramel, dark fruit, and molasses. With a color range of 115–155 Lovibond, it contributes a dark reddish-brown hue along with a complex sweetness that layers richness into any recipe.

Where It Shines

This malt is a cornerstone in Belgian Dubbels, Quads, and other dark ales, where it provides raisin- and prune-like flavors alongside burnt sugar complexity. It also enhances porters, stouts, and other malt-forward beers that benefit from dark fruit and caramelized depth.

Role in the Brewhouse

As a dark crystal-style malt, Special B® contributes unfermentable sugars, rich color, and layered sweetness but no enzymatic power. It is best combined with base malts and other specialties to round out body and flavor while adding signature Belgian character.

Brewer’s Guidance

Use sparingly—typically 2–10% of the grist—to add dark fruit notes, rich caramel depth, and complexity without overwhelming the beer. It is especially effective in strong Belgian ales and other recipes where layered malt sweetness is desired.
