Briess American Honey Malt is a handcrafted melanoidin-style malt made from carefully selected American-grown barley, developed with a specialized steeping and germination process that enhances its complex flavor. It delivers smooth, honey-like notes and sweet bread aromas at lower inclusion rates, developing into richer graham cracker, biscuit, toffee, and brown sugar tones when used more generously.

Where It Shines

This malt brings aromatic bakery warmth to a wide spectrum of beer styles—from light lagers and pale ales to malty-forward beers like dark lagers, amber ales, Scottish ales, and reds. At 1–5% inclusion it adds subtle honey and bread undertones; 5–10% brings complex honey and graham cracker richness; and 10–20% creates pronounced, warming bakery character.

Role in the Brewhouse

American Honey Malt acts mainly as a specialty malt, adding sweet and toasty layers of aroma and flavor that deepen complexity without overpowering the malt backbone. Though not used as a base, it complements neutral base malts to enrich body, color, and malt character.

Brewer’s Guidance

Use this malt at 1–5% to subtly enhance honeyed sweetness, 5–10% to add graham cracker and biscuit notes, and 10–20% when aiming for rich bakery-like depth. It’s excellent in amber ales, Scottish ales, reds, brown ales, bocks, ESBs, and porters—anywhere you want smooth malt complexity without the harshness of darker crystal malts.
