Brewing Notes
Boil
Boil for 60 minutes. Add Magnum at 60 minutes for firm bitterness. Layer CTZ at 30 minutes, then finish with a rapid-fire trio at 1 minute – Centennial, Citra, and more CTZ – to lock in grapefruit, orange, and dank citrus. Use Whirlfloc at 15 minutes for clarity, plus Servomyces and yeast nutrient at 10 minutes to support a healthy fermentation.
Fermentation
Chill to 66-68 °F and pitch WLP001 California Ale Yeast. A two-stage fermentation yields clarity and a clean finish. Condition cold for about 14 days before packaging.
Dry Hop
Dry hop with 3.75 oz Falconer’s Flight for 3 days near the end of fermentation or 3 days before packaging. Keep oxygen exposure minimal and crash cold immediately after contact time.
Carbonation & Serving
Keg at 45 °F and 14.9 psi for a lively but not foamy presentation. Target 2.3-2.6 volumes CO₂. Serve at 40-45 °F in a nonic or stemmed tulip to focus aroma.
